1 lb. green beans, blanched
1/2 c. shredded carrots
1 tbsp. garlic, freshly chopped
2 tbsp. light olive oil
2 oz. unsalted butter
1 tsp. Kosher salt
1/8 tsp. freshly ground black pepper

Directions:
Directions:
1. To blanch the beans, immerse them in boiling salted water for 3 minutes, then drain thoroughly and immerse in ice water until chilled.
2. Drain beans. Get a saute pan hot and add olive oil.
3. When the oil is hot add the garlic and cook for 20 seconds.
4. Add butter, green beans, and carrots.
5. Cook for 5 minutes or until done. Add salt and pepper.
