1/4 cup white vinegar
1 tablespoon catchup
1 teaspoon soy sauce
1/3 cup sugar
1 can pineapple chunks in heavy syrup
1/2 large green bell pepper, diced
1 large egg, beaten
1/4 teaspoon salt
Crisco shortening or oil for frying
2 1/2 pounds pork, cut into bite size pieces

Directions:

Stir together until smooth 1 tablespoon cornstarch, vinegar, catchup and soy sauce. Stir in the sugar and 2/3 cup of the syrup from the pineapple until sugar dissolves.
Dip pork into egg mixture. Put about 1 cup of cornstarch and 1/4 teaspoon salt into a Ziploc bag. Add pork and shake to coat completely with cornstarch.
Fry pork in hot oil 425º until done. Drain on paper towels and keep warm.
Heat pineapple mixture and 1 tablespoon of oil until thick , stirring constantly. Add pineapple chunks and diced bell pepper.
Serve with sticky rice.
Usually I double the amount of sauce for that amount of meat.
