3-4lb Eye of Round Roast.
1 Large Onion
1 stick of butter
Salt and Pepper
1 Package of Lipton Onion Soup Mix
1 Can of Beef Broth

Directions:
Directions:
Start Crockpot on low setting.

Salt and Pepper all sides of Roast.
In Large pan melt butter and brown Roast on all sides.
Slice onion thinly add to crockpot first.
Add beef broth
Add roast cut 3 small slits on top of Roast and stuff with butter pads
Using can from broth add Lipton soup mix to can and add water stir and pour over Roast.
Cover and cook on low for 6 to 7 hours.

Serve with whipped mash potatoes,Greenbean casserole and Grilled Bread

Our Grandfather Earl Crowley and our Father cooked a roast almost every Sunday. The smell of the roast always reminds me of them :)
