4 pounds watermelon rind, peeled but with a bit of pink still showing
2 cups Vinegar
2 cups water
4 cups sugar
2 cinnamon sticks
1 teaspoon whole cloves
1 teaspoon whole allspice
1 lemon sliced thin

Directions:
Directions:
Cut rind into pieces 2X1 inch and about 1/2" thick. Soak rind overnight in brine made by dissolving 1/4 cup salt in each quart water used.
Drain rind. Wash in fresh water and drain again. Cook rind in fresh water until tender. Combine remaining ingredients and boil 5 minutes. Add rind a few pieces at a time and cook until rind is clear. Pack rind in hot sterilized jars and cove with boiling syrup. Makes 2 pints.
