2 lbs. yellow squash (crooked neck if available), sliced
2 medium onions, chopped
6 oz. cream cheese
Salt and pepper to taste
1 sleeve Ritz crackers, crushed
½ stick butter, melted

Directions:
Directions:
Cook squash and onions until tender and drain in colander for ½ hour. While draining, lay cream cheese on top to soften. With mixer, mix squash, onions, cream cheese, salt and pepper. Place in casserole dish. Spread cracker crumbs on top. Pour melted butter over crackers. Cook at 350º, for 30 minutes or until brown on top. This casserole can be prepped and frozen before cooking.
