2 lbs. frozen has brown potatoes, partially thawed
16 oz. sour cream
2 c. (8oz.) shredded Colby cheese
1 c. (4oz.) shredded Monterey Jack cheese
1/2 c. chopped onion
1/2 c. chopped green bell pepper
1 - 2 oz. jar sliced pimientos, drained
1 Tbsp. chicken flavor bouillon

1. Preheat oven to 350º
2. Combine all ingredients in large bowl except 1/2 c. Colby cheese, mix well
3. Place into buttered 13x9 baking dish
4. Bake 55-60 minutes or until potatoes are tender
5. top with remaining cheese
6. Bake 3-5 minutes or until cheese melts
7. Remove from oven. Let stand 5 minutes.
8., Refrigerate leftovers and enjoy for the week.
