1 pound fresh cranberries
2 c. sugar
2 oranges (peeled)
3 apples (peeled and cored)
1/2 c. nuts- I usually use pecans, but almonds are also good
1 can crushed pineapple, drained (juice set to side)
2 pkg raspberry jello, dissolved in 1 c hot water and 1 c pineapple juice (set to side)

In a food processor, grind up the cranberries & peeled oranges- transfer to a large bowl & set to side. With the shred blade of the processor, grate the apples. Add the apples to the cranberries. Chop the nuts & add to the fruit. Add the pineapple, mix all fruit & nuts well. When the jello is cooled, add to the fruit/nut mixture, mix well, & allow to set in the refrigerator.
Number of Servings: so many.... or a few
Prep Time: 30 minutes-and until jello is set

This is a recipe of my Great Grandma Evyline Ferguson. This is one of those dishes that I never really appreciated until I was older. Maybe because the recipe varied so much depending on who made it. My Great Grandma lived with 2 of her daughters, and I could always tell who made it. Great Grandma kept it sweet with only fruit. My Great Aunts always seemed to add grated celery and carrots... This recipe has been around forever. My copy of this recipe says that everything has to be grated. Have you ever tried to grate a cranberry with no food processor? Me either, and I don't want to. Also, at the end it says to serve plain, or with salad dressing. Ummmm, no. Mayo on my jello? Pass. This is one of many recipes that my Great Grandma made that only ever got written down because someone was there watching her do everything. I miss her still... Enjoy! Don't be afraid of the cranberry!
