1 unbaked pie crust (see "Cindy's Pie Crust Recipe")

Filling:
7-8 c. apples (peeled & sliced--about 6 apples)
1/2 c. sugar
1/4 c. all-purpose flour
1/4 tsp. salt
juice of 1/2 lemon

Topping:
3/4 c. butter
1/2 c. all-purpose flour
1 c. packed brown sugar
1/4 tsp. salt
1/2 c. quick oats
1/2 c. finely chopped pecans
1/2 c. jarred caramel topping

Directions:
Directions:
Preheat oven to 375º. Throw apples into large bowl with sugar, flour, salt & lemon juice. Then stir around to combine. Let set for a few minutes while you make crumb topping.

In separate bowl, combine butter, flour, brown sugar & salt with pastry blender until mixture is crumbly & lumpy. Add oats & pecans, then stir to combine completely.

Mound apples into pie crust. Then sprinkle on the topping. Lightly cover crust edges with foil. Bake pie 25 minutes, then remove foil & continue baking 25-30 minutes until top is golden brown. Watch top as it bakes, and if it's browning too quickly, cover pie with foil. Remove from oven, drizzle caramel sauce over top of pie & serve big ol' wedges!
