1 large can of beef (28 oz.) with broth
6 - 8 medium potatoes, diced
2 - 3 carrots, sliced
2 - 3 ribs of celery, sliced
1 med. onion, diced
1/2 head of cabbage, cut into small pieces
1 qt. tomato juice
4 - 6 beef bouillon cubes
Water - 2 to 3 cups to dilute tomato juice
Salt & pepper to taste

Put all ingredients except cabbage & bouillon cubes in a large soup kettle and bring to a boil. Reduce heat and add bouillon cubes and simmer until vegetables are tender, then add cabbage and continue to simmer until cabbage is tender.

Hazel didn't have a written recipe for her vegetable soup, so many years ago I jotted down the ingredients hoping I could duplicate it. She didn't use frozen mixed vegetabless. You wouldn't find any corn or green beans in her soup either and we all loved it. This is the only way my girls will make it now too! A cherished recipe for sure!
