1 lb. lean hamburger meat
1 cup finely minced Chinese Cabbage (boiled)
1 cup finely minced dried mushrooms
1/2 cup finely minced green onion
1 cup finely minced leek
1 tsp. fresh ginger juice
1 clove minced garlic
1 tablespoon Sake
3 tablespoons soy sauce
1 tablespoons sesame oil
1 tsp salt
dash of pepper
Gyoza skins (from Oriental grocery store or you can make your own)

Directions:
Directions:
Combine all except Gyoza skin and mix well.
Place 1 tablespoon of meat on the half of gyoza skin, moisten edge of skin and fold edge to edge and then pinch to seal.
Fry in hot oil. You can also brown them, then add water to steam like a dumpling.

When I was at Camp Zama, Japan, my boss was a Warrant Officer who was married to a Japanese woman. She asked me to type this recipe for her and I kept a copy for myself. These are delicious as appetizers. You can also make and freeze a batch. Just thaw and cook when desired.
