6 -8 slices of bacon, fried & crumbled (reserve 1/4 C. drippings)
1 1/3 c. Minute rice
1 med. onion, chopped
1/2 med. green pepper, chopped
1-3/4 c. hot water
2 (8 oz) cans tomato sauce, or 1 (15 oz) can
1/2 tsp. salt
1/4 tsp. pepper

Fry bacon until crisp in a large covered skillet & put aside on paper towels. Saute the rice, onions & green peppers in at least 1/4 c. reserved bacon drippings until rice is lightly browned. Add water, tomato sauce, salt, pepper & crumbled bacon. Cover & simmer for 10 minutes.

This recipe is from my sister Bo (Cheryl) and is in her own handwriting, which makes it so special to me. She passed away in 2005...and whenever I make it I think of her.
