6 - 8 potatoes, peeled & diced
2 - 3 carrots, sliced
1 - 2 ribs of celery, sliced
1 onion, chopped
1 - 8 oz. cream cheese, softened
1/4 c. butter or margarine, softened
1 small can cream of chicken soup
2 c. milk
salt & pepper to taste
1/2 lb. bacon fried & crumbled

Directions:
Put potatoes, carrots, celery & onion in a large kettle. Add just enough water to cover vegetables & cook until tender. Meanwhile in a mixing bowl, combine cream cheese, butter & undiluted soup. Mix well, then add milk, salt, pepper & bacon. Add this mixture to undrained vegetables in kettle & heat through. For a thicker soup, drain vegetables before adding the cream cheese mixture.

This is by far the best potato soup recipe that I have ever tried. It was taken from Cooking on the Playground - Paulding Elementary & was submitted by Coletta Clark. She was Candi's kindergarten teacher in 1981-82. Rachel Harpster was one of the students whose artwork was chosen for the cookbook.
