INGREDIENTS

Ingredients for 6 people


1 Box Barilla Penne
6 tbsp olive oil
1 clove garlic, chopped fine
2 cups baby arugula
¼ cup chives, minced (or use an equivalent of dried chives)
2 balls fresh mozzarella, cut in small pieces
2 pints cherry tomatoes, halved
¼ cup Parmigiano-Reggiano cheese, shredded
2 tbsp lemon juice
salt to taste
black pepper to taste

1. Bring a large pot of water to a boil.
2. Season with salt, and cook pasta 1 minute under the required cooking time.
3. Drain and toss with 1 tbsp olive oil; place on sheet tray to cool down.
4. In a small skillet saute garlic in 2 tbsp olive oil until slightly yellow in color; set aside to cool.
5. In a large bowl combine halved cherry tomatoes, minced chives, fresh mozzarella and arugula, season with salt and black pepper.
6. Toss with remaining olive oil, garlic, and lemon juice to combine.
7. Sprinkle with Parmigiano cheese and toss again.
8. Let it rest for 30 minutes before serving

You can use yellow tomatoes also, if you like. I generally use all red. You can substitute regular mozzarella for fresh; not quite the same but still tastes good. I prefer the fresh mozzarella.
