4 1/2 C. sugar
1 C. cornstarch
2 tsp. cinnamon
1/4 tsp. nutmeg
2 tsp. salt
10 C. water
3 Tbsp. lemon juice
6 pounds apple

Directions:
Directions:
1. In a large pan, mix sugar, cornstarch, cinnamon, & nutmeg. Add salt & water. Mix well. Bring to a boil & cook till thick & bubbly. Remove from heat & add lemon juice.
2. Sterilize canning jars, lids, & rings. by boiling them in water.
3. Peel, core, & slice apples. Pack the sliced apples into hot canning jars, leaving a 1/2 inch headspace.
4.Fill jars with hot syrup & remove air bubbles with a knife.
5. Put lids on & process in water bath canner for 20 min.

*** If you don't want to can, let syrup cool & mix apples & syrup together. Place in freezer bags, remove air & freeze quickly.
