8 Medium to large Potatoes
1 lb Velvetta Cheese
1 small onion
1 stick butter or margarine

Boil potatoes until soft. Cube them (don't peel). Cut cheese in to cubes also. Brown onions in butter in a frying pan.

Layer the ingredients in a casserole dish, starting with a layer of potatoes. Lightly pepper. Add a layer of cheese cubes, then pour some of the butter/onion mixture over them. Continue to layer in this order until all ingredients are used up. Bake at 350º for 30 minutes.
