1 to 2 lbs hamburger or italian sausage
2 cloves garlic
2 cups minced onions (opt)
salad or olive oil
2 4oz cans tomato sauce
2 sm cans tomato paste
1/4 to 1/2 tsp pepper
1/to 3 tsp oregano
1 lb lasagna noodles
1/2 lb mozzarella cheese
2 lb low fat cottage cheese

Brown meat, garlic an onions in a small amount of oil. Add tomato sauce tomato paste, salt, pepper, and oregano. Cover and simmer for 15 min. Arrange layers of noodles, mozzarella cheese, cottage cheese, meat sauce in large rectangular pan. Repeat layers until dish is filled. Top with grated cheese. Bake at 350º for 30 to 50 minutes. Water may be added to meat and tomato mixture.

We always ate dinner at the table as a family. It was very important to Mom, so she planned dinner at a time that everyone would be home. This was not always easy. Lasagna was a favorite.
