1/4 c. golden raisins
2 red onions, cut into wedges
1 head cauliflower, cored and cut into pieces
1 pint grape tomatoes
2 T. olive oil
salt & pepper
1 & 1/2 lbs. salmon fillet
1/2 tsp. curry powder

Directions:
Directions:
1) Heat oven to 425º. Put raisins in a small pot, add enough water to cover and bring to a boil. Remove from heat and let sit.
2) Divide the onions, cauliflower, and tomatoes between two large rimmed baking sheets. Toss each with 1 T. oil and 1/4 tsp. each salt and pepper. Roast for 20 minutes.
3) Season the salmon with the curry, 1/2 tsp. salt and 1/4 tsp. pepper. Nestle the salmon between the vegetables on one (or both) of the baking sheets. Continue roasting both pans until the salmon is opaque throughout and the vegetables are golden brown and tender, 12-15 minutes more.
4) Transfer the salmon to plates. Drain the raisins and toss with the vegetables. Serve with the salmon.
