1 cup vegetable oil
1/4 cup white wine vinegar
2 tbsp grated onion
4 tbsp Dijon mustard
2 tsp sugar
salt and pepper, to taste

1 lb baby spinach
sliced mushrooms
1 boiled egg, chopped
frozen green peas, thawed
bacon, cooked and crumbled
red onion, thinly sliced

Directions:

Mix dressing ingredients together in a jar and shake well.

Mix salad ingredients together and toss with dressing 15 minutes before serving.
