1 can pineapple rings, in juice
2-3 TBSP butter
¼ c. brown sugar
1 tsp. rum extract, to taste

Melt butter and then stir in brown sugar and rum extract. Mix well. It should be a semi-thick 'batter'. Drain pineapple juice and discard (or drink/save if desired.) Coat each pineapple ring in the 'batter' and fry on a flat griddle until pineapple is warm and the 'batter' has caramelized. Note: The brown sugar will become hardened on your griddle so clean immediately. If you delay, slightly warm griddle so you can remove the caramel.
