1. Boiled Rice 1 ½ cup

2. Mixed Vegetables ¾ Cup [Frozen peas,carrots and beans]

3. Onion ½ Cup [chopped in small pieces]

4. Green chilies 1 [chopped in small pieces]

5. Curry leaves (optional) 3-4

6. Mustard seeds black ½ tsp

7. Turmeric powder 1 tsp

8. Coriander Powder ½ tsp

9. Salt ½ tsp or according to taste

10. Water 1½ tbsp. water

11. Lemon juice 1 tsp

12. Oil 1½ tbsp

Wash the frozen vegetables and keep aside.

Heat oil in the fry pan/wok on medium heat. Add mustard seeds and when they begin to spatter, add the onions, green chilles and curry leaves.

Fry onions for 2 minutes. Then add the vegetables. Sprinkle the salt and water.Mix and cover to cook on slow flame for 10-12 min. Stir a couple of times in between.

Add turmeric powder and coriander powder to the vegetables and mix well.

Add pre-cooked/ leftover boiled rice and mix well. Cover and cook for 2 minutes so that the vegetables,rice and spices blend together.

Turn off the heat and sprinkle lemon juice and use quick,easy and delicious pulao is ready to eat. Serve hot.

TIPS
In this recipe I have used Basmati rice.
I have used organic turmeric and coriander powder which I buy from www.vitacost.com
To add more crunchy flavor you may add roasted or fried peanuts, cashews or walnuts.
