Ham, smoked whole
750ml Chablis wine
Hungarian paprika
garlic powder
onion powder

Preheat oven to 275º (yes, that is 275º). Peel skin from shank portion of ham and then place in bottom of roasting dish fat side down. Next, score top of ham in an approximate ½-inch grid. Season with salt, pepper, garlic powder, onion powder, and Hungarian paprika to taste. Uncle Anthony uses about ½ tsp. per ingredient. Next pour about 750ml of Chablis wine over ham and this becomes basting juice.

Place in preheated oven at 275º and roast covered for and hour. Then baste ham using the basting juice. Raise oven temperature to 325º for an hour; baste every 30 minutes though.

Raise temperature to 375º and cook another 30 minutes to 1 hour. The ham should brown nicely and the juice in the pan should become clear. This is a sign you are done. During this step you'll want to baste every 15 minutes. If ham is not browned yet, turn the oven temperature up to 450º and remove cover. This should only take about 5-10 minutes to thoroughly brown the ham.

Remove from oven and let it rest for 10 minutes. Transfer to carving board and enjoy!

This is an Ecsedy-family tradition for every holiday get-together! Note that when buying ham it will say that it is fully cooked hickory smoked or whatever smoked. This recipe enhances flavors and repeats the ham nice and slow...as explained by Uncle Matt.
