1 lb. ground pork
1 lb. ground sirloin or ground beef
3 large eggs
⅓ c. Romano (or Romano/Parmesan blend) cheese
¾ c. Italian bread crumbs with a few tablespoons of water
3 cloves of minced garlic (or use garlic salt or garlic powder to taste)
3 TBSP parsley flakes
salt (if you didn't use garlic salt already)
pepper
ketchup or tomato sauce (about 4 TBSP of either)
1 TBSP Worcestershire sauce
3-4 slices bacon, uncooked
2 carrots, cooked, diced or grated, optional
½ onion, diced or grated, optional

Serve with vegetables and mashed potatoes with brown gravy.

Preheat oven to 400º.

Mix together all ingredients except the ketchup/tomato sauce and bacon in a large bowl. Form meat into a loaf and wrap bacon strips around the meatloaf. Top the meatloaf with your choice of ketchup or plain tomato sauce. I like ketchup.

Bake on a foil lined cookie sheet or on a stone baking sheet without foil for 30-40 minutes, until cooked through.

If you are using a stone baking sheet, the stone should be in the oven for the entire preheating time. Slice meatloaf in thick slices and serve with mashed potatoes and a side vegetable for a complete meal. Optional you can add in diced/grated ½ onion and diced/grated 1-2 carrot for additional flavor. For best product, cook the onion and carrots until carrot is soft prior to adding to meat mixture. Omit the ketchup/tomato sauce -- bacon you can keep if desired -- and top finished meat loaf with brown gravy.
