2 c. flour
2 c. mashed potato (instant potatoes)
2 c. boiling water
Prepared Pasta Sauce (see recipe)

Fold water to potato buds and mix well. Let potatoes cool for 5 minutes. Add flour to potatoes and mix thoroughly. Cut a piece of dough and roll like a rope. Cut into ˝-inch pieces. Cook in boiling salted water until gnocchi float to top. Drain gnocchi but do NOT rinse. Note: Do not salt the mashed potatoes. Cover with prepared spaghetti sauce, pesto, alfredo or brown butter sauce and serve!

I like gnocchi with pasta sauce at home. In restaurants I've also enjoyed it with pesto or Alfredo sauce. Another option is to boil gnocchi and then sauté them until lightly browned in butter and fresh sage. If doing the butter and sage, make sure you cook the sage = raw sage on the plate will ruin the dish.

You can use baked potato as well or left over mashed potatoes. The ratio for great gnocchi is 80% potato to 20% flour.
