3 loaves white or wheat bread, day old
1 onion, grated
4 stalks celery, grated
2 lbs. fresh mushrooms washed and sliced (white or bella)
1 stick butter
3-4 cans chicken broth (14.5 oz. can)
salt and pepper

Tear all the bread into pieces and lay out on paper towels or in bowls to dry out for a few hours. Meanwhile, grate onion and celery in food processor. Sauté onion and celery in half the butter until translucent. In a separate pan, sauté cleaned mushrooms in other half of butter and season with salt and pepper.

Combine the bread pieces into a large bowl and add salt and pepper and chicken broth. Add broth slowly as your mixing bread to soften thoroughly. Add in onions and celery, Finally, mix in mushrooms. It should be very soft and a bit mushy now. Bake at 350º to 375º for about 30 minutes until it starts to dry out a bit.
