1 lb. ground beef (85/15) or ground lamb
1 can tomato soup (15 oz. can) (NOTE: You must not add water or milk to the soup!)
1 can vegetables, drained (15 oz. - corn, green beans, or mixed veggies)
mashed potatoes, prepared
¼ onion, grated
cheddar cheese
salt and pepper
crispy dried onion, optional

Preheat 350º.

Fry ground beef/lamb with grated or finely chopped onion. Add salt and pepper to taste. Drain meat to remove any fat/oil. Put meat into a 2 quart casserole (about 4 inches deep). Stir in the tomato sauce and drained vegetables. Top with mashed potatoes. Add cheddar to top if desired. Bake 30-40 minutes until hot and bubbly. If desired, add crispy dried onions and bake additional 5 minutes.

Ground lamb can be used in place of beef. You can use instant mashed potatoes to make this meal even quicker. If so, prepare 8 servings worth according to package directions. Depending on the brand you may need milk and butter or just water. Remember to drain the vegetables prior to adding to your casserole. Most important -- do NOT add any water or milk to the tomato soup. Another variety to try is to replace the tomato soup with a brown gravy. Both are delicious!
