Cake:
200 g butter
165 g sugar
7 eggs separated
180 g melba toast ground
380 g chopped walnuts
2 tsp cinnamon
1 tsp nutmeg
½ tsp cloves
4 tsp baking powder
Orange zest
⅓ c cognac

Syrup:
2 c sugar
100 g honey
2 c water
1 tsp vanilla
1 Tbsp orange juice
¼ c cognac
Cinnamon stick
5 cloves

Directions:
Directions:
1. Cream butter and sugar. Add egg yolks and beat until light, then zest and cognac
2. In a second bowl, beat egg whites until stiff set aside
3. Combine all dry ingredients, except reserve nuts. Mix yolk mix and dry mix till smooth, fold in whites.
4. Gently Pour into a greased 10x13 pan and sprinkle with remaining walnuts.
5. Bake 350 F in buttered pan, for 30 min.
6. Prepare syrup: Boil all till sugar is dissolved.
7. When cake is cooled, cut into diamonds, pour syrup over and lat stand 2 hours before serving.
Note: add cool syrup to hot cake, or warm syrup to cool cake.
