2 T. vegetable oil
2 T. unsalted butter
2 T. lemon, juiced
1 T. ginger, grated
1/8 tsp. salt
1/8 tsp. fine ground black pepper
1 T. shallots, chopped
1 lb. Grouper Fillet

Directions:
Directions:
Heat oven to 450ºF.

Add oil, butter, lemon juice, ginger, salt, pepper and shallot to a shallow casserole or baking dish large enough to hold fish.

Heat dish in oven 5 minutes or until butter melts and begins to sizzle.

Remove dish from oven and turn fish in lemon-ginger mixture to coat both sides.

Return to oven and bake fish 5 to 7 minutes or until the fish begins to flake when tested with a fork.
