1/2 lb. penne rigate pasta
2 C. ricotta cheese
1 C. mozzarella cheese
3/4 C. parmesan
salt and pepper to taste
2 eggs
1 jar marinara sauce
1/4 C. parmesan cheese

Directions:
Directions:
Preheat oven to 350º.
Cook penne as directed.
In a bowl, combine the cheeses, eggs, salt and pepper.
When pasta is cooked, drain and place in bottom of casserole dish.
Pour 1/2 of the marinara sauce on top of pasta, and stir to combine.
Scoop cheese mixture on top of pasta and spread evenly.
Bake 18-20 minutes.
Remove from oven and drizzle the remaining marinara sauce and 1/4 C. parmesan cheese.
Place back in oven and back another 5-10 minutes.
