1/2 cup raw rice, short grain like Arborio
1/2 teaspoon salt
1/4 cup sugar
1/4 tsp cinnamon or nutmet
2 1/2 cups milk
1/2 cup seedless raisins, if desired

Directions:
Directions:
Combine all ingredients in top of double boiler over boiling water. Cook until almost all milk is absorbed, about 1 hour, stirring frequently.
Serve warm with whipped cream, thin custard, or ice cream on top.
