6 Medium Potatoes
2 C. Shredded Cheddar Cheese
1/4 C. Butter
16 oz Sour Cream
1/3 C. Chopped Green Onions
1 tsp. Salt
1/4 tsp. Pepper

Directions:
Directions:
Boil potatoes in skins until soft. Cool, peel and cut up. In saucepan over low heat combine Cheddar cheese and butter. Stir occasionally until cheese almost melts. Remove from heat and blend in sour cream, green onions, salt and pepper.
Fold in potatoes and turn into greased 2 quart casserole dish. Bake at 450º until heated thoroughly, about 25 minutes.
