1 ¼ c boiling water
1 c quick cooking oats
½ c shortening
1 c brown sugar
1 c white sugar
2 whole eggs
1 ½ cups flour
1 t soda
½ t salt
1 ½ t cinnamon
1 t vanilla
1 c nuts

Topping:
6 T melted butter
½ c brown sugar
½ c evaporated milk
1 can coconut
½ t vanilla

Directions:
Directions:
Pour boiling water over oats, and let cool. Cream shortening and brown and white sugar. Add eggs, and beat well. Add oat mixture. Sift together dry ingredients, and slowly add to mixture. Add vanilla, and beat well. Fold in nuts. Bake in prepared 9x13 pan at 325˚F for 30-35 minutes.

Spread mixture of topping ingredients over hot cake, and place under broiler to toast coconut.
