1/2 c. plus 1 Tbsp. sugar, divided
1/4 c. all purpose flour
1/2 - 1 tsp. ground cinnamon
1/4 tsp. ground cloves
1/4 tsp. ground nutmeg
2 - 2 1/2 pounds thinly sliced tart apples, peeled and cored (about 7 cups)
2 pie crusts, either ready to bake or homemade crust, for 9" pie

In large bowl, combine 1/2 c. sugar, flour, cinnamon, cloves and nutmeg. Add apples, toss to coat apples. Place one crust in 9" pie pan. Layer apples in pan. Moisten outside edges of crust with water. Top with second crust, fold edges under edges of lower crust. Flatten with fork or pinch together tightly to seal. Cut air vents in top. Lightly brush top with water and sprinkle with 1 Tbsp. sugar.

Bake at 450º for 15 minutes. Reduce heat to 375º, bake 30 - 40 minutes longer or until golden and bubbly. If top begins to get too brown, loosely cover with foil.

Excellent apple pie. Use gala, fuji, or jonathan apples. Granny smith can be used but very tart. Also, do NOT use red delicious apples - too mushy.
