2 cups fresh blueberries 1/4 tsp salt
2 Tbsp cornstarch 1/2 cup plus 1 tsp sugar
1 Tbsp fresh lemon zest 1 9 inch refrig. pie crust
1 Tbsp fresh lemon juice 1 Tbsp cold butter, cut into pieces
1/4 tsp cinnamon 1 Lg egg lightly beaten

Put oven rack in middle position and preheat oven to 425. Line a cookie sheet with foil and butter the foil. Stir together blueberries, cornstarch, zest, juice, cinnamon, salt and 1/2 cup of sugar in large bowl until combined. unwrap pie dough and unfold onto baking sheet then spoon blueberry mixture into center of dough, leaving a 1 1/2 inch border around the edge. Fold edge of dough over 1 inch of blueberry mixture, pleating dough, then dot blueberry filling with butter pieces. Lightly brush pastry with some of the beaten egg and sprinkle with remaining tsp. of sugar. Bake until the filling is bubbling and pasty is golden about 25-30 minutes. Cool on baking sheet on a rack.
