2¼ c. flour
1 teaspoon baking soda
1 teaspoon salt
1 cup (2 sticks) butter, softened
¾cup granulated sugar
¾ cup packed brown sugar
1 teaspoon vanilla extract
2 large eggs
2 cups (12-oz. pkg) chocolate chips
1 cup chopped nuts

Directions:

Sift together dry ingredients: flour, soda, and salt. Cream butter, both sugars, and vanilla in large mixer bowl until creamy and fluffy. Add eggs, one at a time, beating well after each addition. Gradually stir in flour mixture, then add chocolate chips and nuts. Bake for 9-11 minutes or until just beginng to brown (for very chewy) or golden brown for a dryer chewy cookie. Remove from oven and allow to sit for a minute or two before transferring to wire racks to cool completely.
FOR HIGH ALTITUDE BAKING (5,200 feet +): Increase flour to 2 1/2 cups. Add 2 teaspoons water with flour and reduce both granulated sugar and brown sugar to 2/3 cup each. Bake drop cookies for 8 to 10 minutes and pan cookie for 17 to 19 minutes.

I've never purposely followed the 'high altitude' recipe. I am NOT absolutely careful with my measurements either, so I may have inadvertently made them appropriately. They always turn out just the way I want if I watch them carefully and remove from oven at the FIRST sign on browning.
