2 c. cranberries
¾ c. pecans
⅔ c. sugar
1 c. flour
1 c. sugar
½ c. unsalted butter, melted
2 large eggs, lightly beaten
1 tsp. pure almond extract
¼ tsp. salt

Directions:
Preheat oven to 350º F. and butter a cake pan or pie pan.
ADD cranberries to the bottom of this pan
Sprinkle in chopped pecans then sprinkle in ⅔ c. sugar
In a medium bowl, stir to combine; flour, 1 c. sugar, melted butter, eggs, almond and salt.
Pour batter slowly over the top in large ribbon shapes in order to evenly cover the surface.
BAKE: 350º F. for 45 minutes or so. A few minutes prior to removing from oven, sprinkle surface with 1 T. sugar for extra crunch. Cut into wedges.
Serve with ice cream or freshly whipped cream.

I found this recipe in the Daughters of Utah Pioneer lesson book at Christmas time and loved how it turned out! A delicious way to add bright color and intense flavors at this special time of year!!
