1 c. shortening
1 c. sugar, white
1 c. brown sugar
1 tsp vanilla
3 eggs, beaten
1 tsp. salt
1 tsp. soda
1 tsp. baking powder
1 c. drained crushed pineapple
4 c. cups flour-may need more
1/2 c. chopped nuts (optional)

Directions:
Directions:
Cream together shortening and sugars with vanilla. Add rest of ingredients; eggs, salt, soda, baking powder, pineapple, flour and nuts. Mix to a soft dough. Drop from spoon about 3" apart on baking sheet. Bake at 375º F for 8-10 minutes.

Boiled raisin Cookies: substitute 2 c. raisins (for pineapple) that have been boiled for 5 min in 3/4 c. water. Add 3/4 tsp. cinnamon and 1/2 tsp. nutmeg.
It is possible to cook these in a waffle iron for 70-90 seconds, but watch the time closely.
