5 c. cooked chicken (1 very large or 2 small chickens)
2 T. salad oil
2 T. orange juice concentrate
2 T. vinegar
1 tsp. salt
3 c. cooked rice
1 1/2 c green grapes
1 1/2 c. celery, diced
1 can pineapple tidbits, drained (appx. 2 c.)
1 sm. can mandarin oranges, drained
1 1/2 c. mayonnaise
1 c. toasted slivered almonds

Combine chicken, oil, orange juice, vinegar, and salt. Let sit overnight. Mix rice, grapes, celery, pineapple, oranges, mayo and almonds with chicken mixture the next morning. May substitute dried cranberries for grapes or use both. Chopped apples could also be added. Using a different nut is also a great variation.

An older, wiser and dear friend gave this recipe to me as a young bride so many years ago. It is great for a luncheon served on a lettuce leaf or as a sandwich filling, especially with croissants!
