2 carrots, sliced
3 stalks celery, sliced
1/2 onion, grated or finely chopped
2 peeled potatoes, cubed (optional)
3 cubes butter
1 1/2 cups flour
5 Tbsp. chicken base
3 quarts boiling water
1 jar (16 oz.) Cheese Whiz
2 cups frozen peas

Directions:

Add just enough water to cover veggies. Cook until tender. Set aside. Melt butter in pan & stir in flour. Add half the boiling water, stir well and cook until blended. Add chicken base to remaining water and add to soup until thick & smooth. Melt the cheese and stir into soup. Add veggies and season to taste with salt & pepper.

We often had pot-luck while I was working at Melaleuca as the Mail Room
supervisor. One co-worker contributed this soup & recipe at one of our lunches. Not long after that lunch, she was involved in a car accident with a Black Angus bull and died from head trauma two days later. Even though my heart was saddened, her warm, caring personality & sense of humor has remained in my memory.
