1 14.5 oz. can whole peeled tomatoes
1 10 oz. can Rotel, diced tomatoes and green chiles
1/8 c. chopped onion
1/2 c. chopped fresh cilantro
1 clove minced garlic (about 1/2 tsp.)
1/2 seeded jalapeno (optional)
1/4 tsp. ground cumin
1/4 tsp. salt
1/4 tsp. sugar
1 tbsp. lime juice

In blender, combine first five ingredients and jalapeno if desired. Blend until all ingredients look well-chopped. Add remaining ingredients and pulse another 10-15 seconds. Serve with tortilla chips.

I usually make this recipe "off-the-cuff," using more or less onion, cilantro, cumin, etc. to taste. My husband likes it with the jalapeno, my kids like it more mild without the jalapeno. Either way, this is a very fast and tasty salsa.
