2 lbs fresh sauerkraut
2-3 apples, peeled and sliced
1 large onion, sliced
2 tablespoons butter
1/2 teaspoon crushed caraway seeds
1 teaspoon sugar
1 raw potato, grated OR 2 tablespoons flour*
2 cups water or white wine
1/2 teaspoon salt or to taste

Rinse sauerkraut with warm water, drain well. Saute the apples and onion in butter until soft. Add caraway, sugar and the rinsed kraut. Simmer covered 1/2 hour. Add potato, water or wine and salt. Continue cooking until sauerkraut is tender to your taste (apx 1 hour longer)

* Instead of the potato, flour may be stirred into the kraut just before liquid is added. This creates a thickend sauce.

This can be all thrown into a crockpot without any other preparation and cook on low for 8 hours. You can also add sausage, pork chops or ribs.
