1 1/2 c. boiling water
1 1/2 c. minute rice
1/2 tbsp. sesame oil
1/2 tbsp. vegetable oil
1/2 c. frozen peas and carrots, thawed
1-2 tbsp. yellow onion, thinly diced
1 egg, beaten
1-2 tbsp. soy sauce (more or less to taste)

In medium-sized sauce pan, boil water and add rice. Boil rice one minute, then remove from heat, cover, and set aside. Preheat a large skillet or wok to medium heat. Pour sesame and vegetable oil in the bottom. Add peas and carrots and onion and fry until tender. Slide the onion, peas and carrots to the side, and pour the beaten egg onto the other side. Using a spatula, scramble the egg. Once cooked, mix the eggs with the vegetable mix. Add the rice to the veggie and egg mixture. Pour the soy sauce on top. Stir and fry the rice and veggie mixture until heated through and combined.
