1 Tbls butter
1 cp quinoa
2 cps chicken broth, low sodium
1/2 tsp minced garlic
2 tsp dried parsley
1 tsp dried thyme
1 bunch green onion, chopped
1/2 cp frozen pearl onions
1.2 cp frozen sliced carrots
1/2 cp frozen peas

Directions:

Melt butter in a saucepan over medium heat. Add the quinoa, and toast, stirring occasionally, until lightly browned, about 5 minutes. Stir in broth, and bring to a boil. Reduce to a simmer, cover, and cook for 15-20 minutes, or until quinoa is tender.

Put the frozen veggies in a bowl with water. Microwave on high 5 min or until the veggies are nice and hot. Drain well.

In a bowl, toss quinoa together with garlic, parsley, thyme, salt, and onion. Stir in the veggies. Sprinkle with lemon juice, and serve.

2 cp liquid/1 cp quinoa is done in 20 min but 1 cp liquid/1/2 cp quinoa is out of liquid in 15 min. Add another 1/4 cp liquid when doing the smaller amount for 1 serving.
