Applebee's Oriental Chicken Salad Recipe

Ingredients: CHICKEN 2 skinless boneless chicken breasts 2 cps vegetable oil 1 egg ½ cp milk ½ cp flour ½ cp corn flake crumbs Salt & pepper
SALAD 4 cps chopped Romaine lettuce 2 cps chopped red cabbage 2 cps chopped Napa cabbage 1 lrg shredded carrot ¼ cp sliced almonds 1 cp thin crispy chow mein noodles
DRESSING - Dole Sweet Onion & Citrus Dressing 1 clove garlic 1/2 cup sweet onion (chopped) 1/4 cup orange juice (no pulp) 1/2 cup olive oil 2 Tbls sugar 1/4 cup apple cider vinegar 1/4 cup dijon mustard 1 tbsp honey 1 tsp salt 1 tsp pepper

Directions:CHICKEN Preheat oil in a deep pan over med heat to 350*. In a sm shallow bowl beat the egg with the milk. In another bowl combine the flour with corn flakes crumbs, salt and pepper. Cut the chicken breasts into 4-5 strips each. Dip each strip of chicken first into the egg and then into the flour mixture, coating completely. Fry each chicken finger for 5 min or until coating is a nice brown. Set on paper towels to drain and cool. Cut into chunks when cool.
SALAD Prepare salad by tossing the romaine and two cabbages with the carrots. Toast the almonds in a small skillet over med heat for 3-4 min or until light brown. Sprinkle toasted almonds over the salad, then add the chow mein noodles. Add chicken and toss with dressing.
DRESSING Combine ingredients in blender and blend until smooth. Pour onto salad to your taste. |

Notes: This dressing isn't exactly what they serve at Applebees but it's closer than any of the recipes I found online for the Applebees dressing. They were mostly awful and all super high in sugar.
