1 whole roasting chicken
1 can of beer (12 ounces)
Mrs. Dash salt free garlic and herb seasoning
olive oil

1. Preheat oven to 350 F. Place the beer butt chicken rack in a 9x13 baking dish. Pour 1/3 of your beer into the baking dish and then put the open can in the rack.
2. Empty the chicken cavity and rinse thoroughly. Pat dry with paper towels. Use a small amount of olive oil and rub it all over the bird. Liberally add your seasoning to the outside making sure to cover all areas of the bird.
3. Fit the butt of the chicken over and on top of the rack/beer can. The bird should sit upright in the baking dish.
4. To ensure even cooking of the wings, make two 1 inch slices on the breast side of the bird, so that you can tuck the wing tips below the skin.
5. Place the bird in the oven and bake for 20 minutes per pound plus 15 minutes. For example, a 5 lb bird will bake for 115 min or just under 2 hours. During the last 20 minutes of cooking time, insert a meat thermometer into the thickest part of the breast and thigh to check doneness (170 F). Once it is done, let the bird rest for 5 minutes before cutting into it. Makes 4-6 servings.

I like beer and meat. What else is there? I'v been making this recipe for a long time, and I'm not sure how it got started. You don't have to use a good beer for this recipe, in fact some of the cheap beers work quite well. If you don't have a rack, you can bake the chicken lying down, but you have to punch holes in the beer can, and make sure the holes are right side up inside the bird while it's cooking. The rack is easy and cheap. No basting required!
