Ingredients: 4 thin cut pork chops (about 1/2 inch thick each) 2-3 tbsp packed dark brown sugar salt and pepper, season to taste dried rosemary or herbs de provence, season to taste 1 tbsp bacon grease or butter, plus more if needed 2 medium apples, peeled, cored, and cut into 1/2 inch pieces 1/3 cup or generous handful of dried cherries 1 1/2 cups chicken stock/broth 1/3 cup apricot jam, Simply Fruit or fruit sweetened 1/4 cup Brandy 1/4 tsp ground cinnamon 2 tsp cornstarch, plus more if needed

Directions:1. Season both sides of your pork chops with salt, pepper, brown sugar, and dried rosemary. Set aside. 2. Melt bacon grease or butter in a large pan over high heat, add the pork chops, and cook until crispy brown, about 2 minutes on each side. Immediately transfer pork chops to a plate and cover with foil (the heat trapped inside will finish the cooking process). 3. Add the apples to the pan and cook, stirring gently to brown slightly, about 30 seconds, adding a bit more bacon grease/butter if the pan is dry. Add the stock, jam, Brandy, dried cherries, and cinnamon and stir well. Cook until the sauce thickens and is rich brown in color, about 20 minutes. During the last five minutes of cooking, take some of the liquid from the pan and mix it with some cornstarch in a small bowl, and add it to the pan and stir well. The sauce should thicken and look like a heavy chunky glaze. 4. Uncover the pork chops and top with the glazed apples. Serve with your choice of a vegetable and another side such as roasted red potatoes, mashed sweet potatoes, or risotto. Makes 4 servings. |

Notes: I'm going to admit, I never really liked pork chops until I found this recipe in the cookbook, Bride and Groom First and Forever Cookbook. I thought pork chops were dry, bland, and had to be eaten with loads of applesauce in order to be palatable. This recipe changed my foodie heart. I really love the moist pork chops, and it's all because we trap the heat using foil in order to finish cooking the pork chops. This yields tender moist chops... goodness I'm licking my chops just thinking about it! The brandy apple cherry glaze is 100% grown-up. Way better than just plain applesauce. The glaze is jammed full of flavor! It's rich, hearty, salty and sweet, and just incredibly sophisticated. You will wonder why you've never eaten pork chops this way until now... Cheers to a new pork chop tradition!
