5-6 red potatoes, chopped into small pieces
1 bunch of radishes (11-12 radishes), stems and leaves removed, chopped into small pieces
7 slices bacon, cooked crispy, chopped, reserve bacon grease
1 onion, diced
2 tsp minced garlic
1 bottle clam juice (8 ounces)
4 cups low fat milk (I used 2%)
3 cans minced clams (20 ounces) (do not drain, keep juice)
3 dashes cayenne pepper
3 dashes ground white pepper
3 dashes black pepper
1/2 tsp Old Bay Seasoning (optional)
2 tsp chicken base/bouillon
1/2 tsp thyme
2 bay leaves
3 tbsp all-purpose flour (or cornstarch)
dried parsley, garnish
oyster crackers and dash of hot sauce, to serve

1. Chop potatoes and radishes into small pieces. Put them in a large bowl and set aside. Dice your onion, put in a small bowl, and set aside.
2. In your stockpot, cook 7 slices of bacon until crispy on medium high heat. Set bacon on a paper towel to absorb excess oil. Chop 4 pieces of cooked bacon to use in the chowder and 3 pieces to use as a garnish. Set aside. Leave bacon grease in the pan (use 3 tbsp bacon grease or 3 tbsp butter).
3.Cook your onion in the pan until it is tender and translucent, then add the minced garlic, and cook for an additional minute. Sprinkle the flour on top of the mixture, and stir until combined. Saute for an additional minute to cook the flour, stirring occasionally.
4. Add in the clam juice and stir until combined. Then stir in the milk, potatoes, radishes, seasonings, chicken base, and chopped up bacon (4 pieces) and stir until combined. Continue cooking until the mixture reaches a simmer, but is not boiling.
5. Reduce heat to medium-low, cover, and simmer for about 20 minutes or until the potatoes are soft, stirring occasionally every few minutes so that the bottom does not burn. The smaller you dice your potatoes, the faster they will cook.
When the potatoes are soft, stir in the clams. Taste, and season with more salt and pepper if needed.
6. Serve warm, garnished with desired toppings. Makes 6 servings.

This recipe is inspired by Gimme Some Oven food blog, Lighter New England Clam Chowder. Nick loves New England Clam Chowder, so I decided it was finally time to learn how to make it at home. I wanted to put my own twist on clam chowder and do something that's never been done before, so I added radishes, just for the hell of it. Pretty good! This recipe has great flavor and a wonderful consistency.
