Ingredients: 1 package of Trader Joe's fresh pizza dough (original, whole wheat, or Italian) or use pizza dough of your choice 1 lb chicken breasts, cooked, or rotisserie chicken, thinly sliced or shredded 1 container of your favorite bottled BBQ sauce (Trader Joe's apple bourbon or organic sriracha and garlic BBQ sauce are our favorites) 1 red onion, thinly sliced 1 to 2 tbsp olive oil 1 tbsp water 2 tbsp packed brown sugar 1 jar of diced jalapenos, use amount according to preference mozzarella cheese smoked Gouda cheese grated Parmesan cheese (optional) Frank's RedHot original cayenne pepper sauce (optional, but not for us)

Directions:1. Let the Trader Joe's fresh pizza dough sit on the counter in the bag for 20 minutes. 1. Preheat the oven according to pizza dough directions. We usually cook our pizza at 400 F. 2. Heat olive oil in a large skillet over medium-high heat. Add thinly sliced red onions and cook until tender and translucent. Add 2 tbsp of brown sugar and 1 tbsp of water and stir into the onions. Continue cooking the onions until they are caramelized. Remove from heat and set aside. 3. Roll out your pizza dough on a floured surface and sprinkle flour or cornmeal onto your pizza pan before placing your rolled out dough onto the pizza pan. Place pizza dough onto pizza pan. Prick your dough with a fork all over. 4. Now you are ready to dress up your pizza. Pour and spread BBQ sauce on your pizza using the amount according to your preference- saucy or less saucy. Put the red onions and diced jalapenos on the pizza according to your preference. Next, add the desired amount of cooked and sliced chicken to your pizza and top with as much or as little mozzarella and Gouda cheese as you like. 5. Bake in the oven according to pizza dough directions. We usually bake ours a little longer because we like a crispier crust. 6. Remove from the oven, slice into 8 pieces, and top with grated Parmesan cheese and Frank's RedHot. Makes 4 servings (2 slices = 1 serving). |

Notes: Nick and I love making pizza! When we were dating we made lots of pizza together. Our three favorites that we created are: Kick Ass BBQ Chicken Pizza, Sweet Lovin (light Alfredo sauce, caramelized onions, spinach, grilled chicken, and a blend of white cheeses) and Hawaiian Hooker (like a Hawaiian pizza, but with diced jalapenos and sriracha sauce). We experimented one year after Easter and created the Lamb and Goat pizza- that one was really good too. Very earthy in flavor with thinly sliced lamb, goat cheese, and rosemary. The recipe we have given you is the one we eat most often. We both love BBQ, and this is pizza and BBQ rolled into one hot tasty mess. I often eat this pizza with a side of cooked corn or green peas and carrots. Nick forgoes the veggies and just chows down on as much pizza as he can eat. It really is that good! We often make 2 of these pizzas and eat leftovers during the week for lunches.
