1 lb large raw shrimp or 30 count, peeled and deveined
2 tbsp olive oil
Nick's Season All: 1 tsp each of garlic powder, onion powder, salt, black pepper, and cayenne pepper
8 packets instant grits (butter flavor)
6 cups low fat milk
3 tbsp unsalted butter
2 cups extra sharp white cheddar cheese, shredded
dried parsley (optional)

1. Mix Nick's Season All spice ingredients thoroughly in a small bowl (make a double or triple batch and store the remainder for later use!). Dredge shrimp through the mixture.
2. Heat the 6 cups of milk in a large saucepan over medium high heat, and bring to a simmer. Add in the instant grits and 2 tbsp butter, Mix together and reduce heat to medium low and simmer for 5-10 min, uncovered, stirring frequently.
2. At the same time you are simmering your grits, place a large skillet over a very high heat, and heat 2 tbsp olive oil and 1 tbsp butter.
3. Place the shrimp in the skillet and turn heat down to medium. Cook on both sides for approximately 5 minutes each- pay attention to the shrimp as they cook quickly; when the shrimp curl and turn pink/orange, they are done. Remove skillet from the burner, cover, and set aside.
4. Stir 2 cups cheese into the grits until it melts. Grits are done. Serve instant grits in a bowl, and top with dried parsley and 5 shrimp. Makes 6 servings.

Nick and I were traveling to Gatlinburg, TN in December 2015 to celebrate our first anniversary. Along the way, we stopped for lunch in Asheville, NC, and ate at a restaurant that served many southern dishes, including shrimp and grits. While I didn't get the shrimp and grits dish here, the idea to make a quick shrimp and grits dish was born here. I lived in VA for 20 years and never had shrimp and grits prior to this recipe. I'm hooked on this recipe Nick and I created together. Our cheddar cheese grits are healthier (lower fat) than most recipes and still has all the flavor.
