Ingredients: 4 chicken breasts, sliced and cut into cubes 3-4 tbsp olive oil 1/4 tsp salt 1/2 tsp white pepper 1/2 tsp garlic powder 1/2 tsp onion powder 2 cups low fat milk 4 tbsp Dijon mustard 2 tbsp cornstarch 4 tbsp low fat milk 6 cups of cooked white rice, brown rice, or cauliflower rice salt and pepper to taste grated Parmesan cheese (optional)

Directions:1. In a large pan, cook your chicken over medium high heat with the olive oil and spices. Turn your chicken pieces halfway through to ensure even cooking. Cook the chicken until it's just about done (7-8 minutes). 2. Add two cups of milk and 4 tbsp Dijon mustard to the pan, mix in with the chicken, and bring to a simmer. 3. In a small bowl, whisk together your 4 tbsp of milk and 2 tbsp of cornstarch. Add the rue to the pan and gently mix it in. Reduce heat to medium low and simmer for about 5-10 minutes. Sauce should be thickened. 4. Serve chicken with sauce over a bed of rice. Salt and pepper to taste. Sprinkle with grated Parmesan cheese (optional). Makes 6 servings. |

Notes: My mom (Angele Goff) used to make this recipe while I was growing up. It's another one of my favorite childhood dishes. It's simple and quick to make, and we usually always have the ingredients on hand. I really enjoy the creamy mustard sauce. Leigh likes this dish with Parmesan cheese on top. Though not the traditional topping, it is a tasty addition. This dish will surely please the entire household... even the pickiest of eaters.
