Directions:
1. In a large pan, cook your chicken over medium high heat with the olive oil and spices. Turn your chicken pieces halfway through to ensure even cooking. Cook the chicken until it's just about done (7-8 minutes).
2. Add two cups of milk and 4 tbsp Dijon mustard to the pan, mix in with the chicken, and bring to a simmer.
3. In a small bowl, whisk together your 4 tbsp of milk and 2 tbsp of cornstarch. Add the rue to the pan and gently mix it in. Reduce heat to medium low and simmer for about 5-10 minutes. Sauce should be thickened.

Personal Notes:
My mom (Angele Goff) used to make this recipe while I was growing up. It's another one of my favorite childhood dishes. It's simple and quick to make, and we usually always have the ingredients on hand. I really enjoy the creamy mustard sauce. Leigh likes this dish with Parmesan cheese on top. Though not the traditional topping, it is a tasty addition. This dish will surely please the entire household... even the pickiest of eaters.
