One 3 pound Chuck Roast
1 can Campbell's Beef Consumé
1 Tbsp Montreal Steak Seasoning
1/2 Tbsp Kosher Salt
1/4 teaspoon Ground Black Pepper
1/2 Tbsp Dried Thyme
2 Tbsp Flour
2 Tbsp Oil
2 Pounds Peeled New Potatoes
1 Pound Baby Carrots
2 Stalks Celery Choopped into Chunks
1 Large Sweet Onion, Chopped into Chunks
1/4 Cup Flour
1/2 Stick Butter

Directions:

Mix Montreal Seasoning, Salt, Pepper, and Thyme in a small bowl. Press spice mix onto roast. Press 2 Tbsp flour onto roast. Heat oil in a Dutch oven and brown roast on both sides. Place seasoned roast in a large crock pot. Add vegetables and pour in beef consumé plus one can of water. Cook on low for 8 - 10 hours. Remove beef and place on a platter. Remove vegetables and arrange around roast. Melt butter in Dutch oven. Add 1/4 cup flour, and cook on low until thickened. Add 2 cups of broth from roast and whisk on medium until thickened. Pour the flour mixture back in the crock pot and whisk until thickened. Serve gravy with pot roast.
